Outside the blogiverse I am about to start running around the house trying to locate all the things we need, want or ought to have as the possums and I head to the beach for the last few days of the school holidays. The list is a flexible one according to the girls' wants and my anticipated need to knit, sew, surf (net not wet), garden or cook and entertain small people while I do all these things. First of allthough, I need to summon some strength from coffee and write a few thank you emails for pleasant days we've already enjoyed. To do that I need to look out this recipe passed on to me by my friend Janet. It is, as she told me, the world's easiest way to whip up an impressive sweet thing for a lunch or afternoon tea visit. I've never yet made it without being asked to pass it on.
This is how it goes : cream 120g unsalted butter with 150g sugar and 1 teaspoon vanilla. Beat in 2 eggs and then stir in 90g almond meal and 90g plain flour. Press mixture into a buttered 30cm-ish tart dish. Metal with a loose bottom is best but china lined with a baking paper base will do. Sprinkle berries on top. Bake at 160°C for 30 minutes plus. It will be closer to 45 minutes if using a china dish. Enjoy.
Sadly I don't know which genius came up with this dish so I can't give any credit. I'm happy to do so if someone recognises it.
That looks and sounds delicious, I think I shall give it a try over the weekend. I might use figs seeing as they're plentiful just now, I can just see it with a dollop of creme fraiche. Can you tell my mouth is watering ...
